Crispy Smashed Harissa Potato Salad

  • 1.1 lb baby potatoes
  • 1 heaped tbsp harissa paste
  • 1 tbsp Chicken Bone Broth Lemon & Paprika
  • 3 tbsp olive oil
  • Pinch of salt & pepper
  • 1 small clove garlic
  • Juice of ½ a lemon
  • 3.5 oz feta
  • 1 cup Greek yoghurt
  • ½ cup parsley, chopped 
  • Red onion, chopped
  • Dill

1. Preheat the oven to 325F. Parboil the potatoes until just soft, drain and then place on a lined baking tray then press with a glass. 

2. Mix the broth concentrate, harissa and oil together, pour over the potatoes and mix through. Roast in the oven for 30-40 minutes until crisp.

3. Meanwhile, add garlic, feta, lemon juice and yoghurt to a nutribullet or food processor, blend until smooth.

4. Spread on a plate and top with crispy potatoes.
