For the lamb:

  • 1.1 lb ground lamb
  • Zest of 1 lemon
  • 1 tbsp fresh thyme leaves, removed
  • 1 tbsp oregano leaves, finely chopped
  • 1 garlic clove, finely grated/minced
  • 1 tbsp Chicken Bone Broth Concentrate Lemon Paprika
  • 1 tsp pepper

For the pitas:

  • 6 mini whole wheat pita breads
  • 1 cup Greek yogurt
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, quartered
  • ½ cup pink pickled onions
  • 3.5 oz feta, crumbled
  • ½ cup parsley leaves
  • ⅓ cup oregano leaves, removed
  • Lemon juice
  1. Combine ground lamb, lemon zest, fresh herbs, garlic, chicken bone broth and pepper in a bowl. Mix to combine.
  2. Roll mixture into 4-6 balls, then smash each one onto a whole wheat pita bread.
  3. On medium heat with olive oil, fry the lamb meat side down until golden brown, then flip and cook until golden brown on the other side.
  4. Top with Greek yogurt and salad topping ingredients and a squeeze of lemon juice.
