For the overnight oats, put oats, chia seeds, plant milk, espresso, cinnamon, collagen and maple in a bowl and mix well.
Portion into 2 glasses (or into one container if you prefer) then add a tsp of cacao powder and ripple through the top layer, then place in the fridge for about 4 hours or overnight.
When ready to serve, spoon yoghurt over oats mixture and dust with cacao powder
