Very Veggie Sausage Rolls

  • 2 tbsp Veggie Hero
  • 2 carrots, chopped into ¾-inch chunks
  • 1 cup pumpkin, cubed
  • 2 tbsp olive oil
  • 1 can (14 oz) chickpeas
  • 1 onion, diced
  • 4 cloves of garlic, diced
  • 2 tsp sea salt
  • 1 egg (for egg wash)
  • 7 oz feta (approximately)
  • 2 sheets puff pastry - preferably all butter, additive-free
  1. Preheat oven to 350°F (180°C).
  2. Place carrot and pumpkin on a lined tray then drizzle with olive oil, salt and pepper, bake for 25-30 minutes until nicely roasted and softened
  3. Meanwhile add 1 tbsp olive oil in a medium fry onion and garlic together for a few minutes.
  4. Add in roasted vegetables, veggie hero, chickpeas and feta and stir together for about 2 minutes to combine then set aside in a bowl to allow to cool
  5. Remove puff pastry from the freezer 1 min prior to rolling (especially if working with all butter pastry). Cut in half
  6. Line a baking tray with baking paper
  7. Working quickly divide the mixture into four and create little sausages down the middle of each sheet of puff pastry with the mixture, then roll each sheet to form the sausage roll, cut into four sections
  8. Brush on the egg wash then top
  9. Bake for 30 mins until golden brown, and serve warm with sauce
