2 tbsp Brekkie Hero
½ cup Thriving Family Smooth Vanilla
1½ cups gluten free flour
½ cup coconut sugar
¼ teaspoon ground cinnamon
1½ tsp baking powder
¾ cup natural plain yoghurt
4 ounces butter, melted
2 large eggs
1 medium pear, cored & roughly chopped
1 cup raspberries (fresh or frozen)
1 tbsp desiccated coconut

Method

Preheat the oven 350°CF
Prepare a muffin tray with muffin cases or grease with butter.
In a large mixing bowl combine the dry ingredients - flour, Thriving Family, Brekkie Hero, baking powder, coconut sugar and cinnamon.
Add to the dry ingredients the yoghurt, butter and eggs. Mix until combined.
Fold through the pear and raspberries.
Spoon the batter into the prepared muffin cases or muffin tray and sprinkle on some coconut.
Bake for 15-20 minutes, or until golden and cooked through.
Cool before serving.
